When winter rolls around, there’s simply nothing better than comfort food that’s full of flavour. Add some nourishing ingredients and you’re sure to relish every bite. Charmaine Lilje, chef and owner of Chardonnay Deli in Constantia, has gathered some seasonal ingredients to create dishes that are just right for the cooler months. So, get cosy, gather around the table and savour a warm meal with all your favourite people…

Super C juice (serves 1)

200g granny smith apple (+/- 2 apples), cored
160g orange (+/- 1 large orange), peeled
100g grapefruit (+/- ½ grapefruit) peeled
30g celery (1 stalk)
25g fresh ginger

1. Using a juicer add all the ingredients and juice
2. Serve with or without ice

*Great for a super immune booster*

Super C Juice

Winter warmer soup (serves 4-6)
Lightly curried butternut soup with coconut milk

1kg cleaned and cubed butternut
½ onion, diced
2 cloves fresh garlic
90 ml olive oil
3 Tbs brown sugar
½ tsp cumin powder
½ tsp coriander powder
½ tsp cinnamon powder
1 tsp curry powder
1 can coconut milk
700ml fresh cream
Salt and pepper to taste

1. Preheat the oven to 180C
2. In a deep oven tray place the butternut, 60ml olive oil, sugar and spices, cover with foil and place in the preheated oven
3. Roast for 40 minutes or until the butternut is soft
4. In a medium sized pot over a medium heat sauté the onions and garlic in remaining oil until soft
5. Add the butternut, coconut milk and cream to the pot and gently simmer for a further 15-20 minutes, stirring continuously
6. Blend all the ingredients and adjust seasoning with salt and pepper
7. Serve hot

Winter warmer soup

Open braised lamb pie with emmental (serves 4)

Open braised lamb pie with emmental Ingredients
800g lamb shoulder, deboned and cubed
1 medium onion, diced
1 garlic clove, crushed
½ tsp chopped rosemary
50g butter
50ml olive oil
120ml Italian whole peeled tomatoes
2 Tbs tomato paste
100ml chicken stock
50g grated emmental cheese
160g (40g each) puff pastry per tart
Salt and pepper to taste

1. Preheat the oven to 180C
2. Grease a standard sized muffin tin
3. Cut puff pastry into 4 and press into muffin mould
4. Bake blind for 15 minutes, and allow to cool
5. In a saucepan over a medium high heat add the olive oil and sauté the onion, garlic, rosemary and butter until soft
6. Add the lamb, tomato puree, Italian whole peeled tomatoes and the chicken stock
7. Cook the lamb for est 1 hour up to 1.5 hours until lamb is soft
8. Season the lamb mixture
9. Allow the lamb mixture to cool and divide it between the cooked puff pastry bases
10. Add lots of black pepper on the top
11. Divide the cheese between the 4 tartlets and bake at 180C for 10-15 minutes
12. Serve warm with a side salad

Honey baked apples with homemade crumble (serves 4)

4 granny smith apples, washed
60ml lemon juice
½ tsp cinnamon
50g butter
125ml honey

Sweet pastry
250g cake flour
125g butter
125g brown sugar
1 egg

Method for apples
1. Preheat oven to 180C
2. Place apples in a deep oven dish
3. Add lemon juice, cinnamon, butter and honey on top of the apples
4. Cover with foil
5. Bake for 30 minutes, covered
6. Remove the foil and bake for a further 20 minutes

Method for pastry
1. Preheat oven to 180C
2. Combine the cake flour and butter, mix until slightly crumbly and then add the sugar and egg
3. Mix until the dough comes together (if too wet add a little more cake flour)
4. Wrap the dough in clingwrap and place in the freezer until stiff and cold
5. Grease an oven tray and grate the pastry onto the oven tray
6. Place pastry in preheated oven and bake for 20 minutes or until golden
7. Allow to cool and break it up

1. Its best to serve apples warm and crumble the golden pastry on top
2. Serve with cream or ice cream
