Irish Coffee

Cape Velvet Irish Coffee

INGREDIENTS

50ml Cape Velvet liqueur
180ml good strong hot coffee
2 tsp brown sugar
Whipped cream and chocolate shavings

DIRECTIONS

  • Warm a glass with hot water to prepare
  • Brew the coffee and pour into already warmed glass
  • Add the Cape Velvet liqueur to the coffee and stir (to prevent from curdling first add a teaspoon of cold water to the coffee)
  • Finish off with a generous helping of whipped cream on top and garnish with a sprinkle of chocolate shavings

The ‘Old Fashioned’ Cocktail

INGREDIENTS

For the syrup:

100g brown sugar
100ml water

For the drink:

Bitters
2 slices of orange
2 maraschino cherries
60ml fine bourbon
A Handful of ice

DIRECTIONS

  • To make the syrup add the sugar and the water in a small saucepan and bring to the boil, make sure all the sugar has dissolved before pouring into a jar
  • Put a teaspoon of syrup in a tumbler and add 3 dashes of bitters
  • Add one orange slice and one cherry and along with the syrup and bitters mixture mix and mush well until you get more of a gooey paste consistency
  • Remove the rind and any big bits of fruit that didn’t comply in the mushing process
  • Add the 60ml of bourbon, stir well and add a generous lot of ice
  • Garnish with the remaining orange slice and cherry

Pomegranate Champagne Punch

INGREDIENTS

1 ½ cups of pomegranate juice
1 cup cloudy apple juice
¼ cup orange liqueur
1 bottle (750ml) of Champagne

DIRECTIONS

  • Pour the pomegranate juice, the apple juice and the orange liqueur in a large carafe
  • Slowly add the champagne
  • Pour into glasses over ice
